Apple Cobbler with Cheese

Serve warm with a scoop of vanilla ice cream.

Granny Smith Apples, peeled, cored and chopped (about 7 cups)

Tbsp. lemon juice

Tbsp. cornstarch

½ cups plus 1 tsp. sugar

½ cups all-purpose flour
3/4
cup brown sugar

Tbsp. baking powder
1
tsp. salt
2
sticks (1 cup) cold unsalted butter, cut into ½ inch cubes
1
cup plus 3 Tbsp. buttermilk
1
cup sharp cheddar cheese, grated

Directions

Preheat oven to 425 degrees. Butter a 9 x 13 baking dish. Toss apples with lemon juice. Whisk together cornstarch and sugar in a large bowl, then add in apples and toss to combine well. Transfer to baking dish and bake 10-15 minutes.

While fruit bakes, whisk together flour, brown sugar, baking powder and salt in a large bowl. Cut cold butter into flour mixture until it resembles coarse meal. Add buttermilk and cheese; stir until dough forms.

Drop dough onto hot fruit mixture in mounds, sprinkle dough with remaining teaspoon of sugar. Bake cobbler until top is golden, 25 to 35 minutes.
