Baked Oatmeal

Beth Sanders shared this recipe with us. For the “healthier” version, omit the brown sugar and maple syrup.  This casserole is perfect for breakfast, brunch or to take to a social gathering.

Ingredients

cups old fashioned oats (not instant oatmeal)

cup walnuts (toasted and chopped)
1/3
cup dark brown sugar
1/3
cup maple syrup
1
teaspoon baking powder
1
1/2 teaspoons ground cinnamon
1/2
teaspoon fine grain sea salt
2
cups milk
1
large egg
3
tablespoons unsalted butter melted
2
teaspoons vanilla extract
2
whole ripe bananas sliced into pieces
1
1/2 cups fresh or frozen blueberries
1/2
cup raisins

Directions

Preheat oven to 375/F with rack in top third of oven. Butter 8 X 8 inch baking pan.

In a bowl mix together oats, half the walnuts, brown sugar (if using) baking powder, cinnamon, raisins and salt. In another bowl whisk together maple syrup (if using) milk, egg, 1 ½ tablespoons butter and vanilla

Arrange bananas in a single layer in bottom of prepare baking dish. Sprinkle 1 cup of berries over top of bananas. Cover fruit mixture with oat mixture. Slowly drizzle milk mixture over oats. Gently give baking dish a few thwacks on countertop to make sure milk moves through oats. Scatter remaining ½ cup berries and walnuts on top.

Bake 35 to 45 minutes, until top is golden brown and oats have set. Remove from oven; drizzle remaining 1 ½ tablespoons melted butter on top. Serve with extra sugar, syrup or yogurt.
