Chocolate Cakes with Berries

For a lighter topping, you can serve cakes with Greek yogurt instead of the sour cream topping. These cakes only have 190 calories! Recipe adapted from original by pastry chef James Distefano.

Ingredients

Chocolate Cakes:

cup plus 1 Tablespoon flour

Tablespoons plus ½ teaspoon unsweetened cocoa powder

cup sugar

½ tsp. baking powder
1/4
tsp. salt

½ Tablespoon canola oil
2
large egg yolks
2
Tablespoons fresh orange juice
1/2
tsp. grated orange zest
3
Tablespoons plus 1 tsp. water
4
large egg whites
2
Tablespoons sugar
1
pint strawberries, sliced
1
pint blueberries
Optional Topping: Whipped Sour Cream:

cup whipping cream
1/2
cup sour cream

Tablespoons sugar

Directions

Chocolate Cakes:

Preheat oven to 350 degrees.

In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder and salt.  In another bowl, whisk together the canola oil, egg yolks, orange juice, orange zest and water.  Slowly combine the wet ingredients with the dry ingredients until incorporated and smooth.

Beat the egg whites on medium speed until foamy.  Slowly add 2 tablespoons sugar and continue to beat on high until soft peaks form, 2 minutes.  Using a rubber spatula, fold 1/3 of the egg whites into the batter to lighten it.  Fold in remaining whites.

Divide batter evenly among 5 (6 oz.) ramekins and bake 20-25 minutes.  Let cakes cool completely before unmolding.  Serve with sour cream topping, strawberries and blueberries.

Optional Topping: Whipped Sour Cream:

Beat together all ingredients at medium-high speed for 45 seconds or just until lightly whipped and pourable.  Serve with chocolate cakes and berries immediately.
