Ingredients

Coconut Shrimp

pound large North Carolina shrimp, approximately 25, peeled and deveined
1/4
cup all-purpose flour
1/2
teaspoon garlic powder
1/2
teaspoon salt

large North Carolina eggs, beaten with a fork
1 1/2
cups sweetened shredded coconut
1/2
cup panko bread crumbs
1
cup vegetable oil
Sauce
1/4
cup North Carolina honey
1/2
teaspoon cayenne pepper

Directions

Tools Needed
  • two small bowls
  • one medium bowl
  • deep frying pan
  • drying rack or plate
  • fork
  • tongs
Instructions
  • Clean and dry shrimp
  • In one small bowl, stir together flour, garlic powder and salt
  • In the other small bowl, beat two eggs with fork
  • In the medium bowl, combine coconut flakes and bread crumbs
  • Dredge shrimp in flour, then dip in egg, then dip in coconut mixture
  • Bring oil to a sizzle over medium heat
  • Add shrimp to oil for two minutes per side. Do not place shrimp on top of each other
  • Mix honey and cayenne pepper together and drizzle over shrimp
