Edamame and Green Bean Salad

This is a simple cold marinated salad that is perfect for summer.  It is unique because of the combination of beans, especially edamame. Mix it up and use your favorite beans to create something new.

Ingredients

Tablespoons cider vinegar

Tablespoons rice wine vinegar

Tablespoon Dijon mustard
1
Tablespoon Olive Oil

teaspoon salt
Fresh ground Pepper to taste

oz. Edamame (shelled Soy Beans)
1
lb. Green Beans, trimmed and cut into 1 inch pieces
1
can (15.5 oz.) Garbanzo beans, drained and rinsed

green onions, cut into ½ inch pieces
1/2
red pepper, diced
2
Tablespoons parsley, chopped

Directions

In a small bowl, whisk together cider vinegar, rice wine vinegar, Dijon mustard, salt, pepper and gradually add the olive oil.

Cook the edamame in boiling water for 5 minutes then put into an ice bath. Remove and pat dry.

Cook the green beans in boiling water for 3-6 minutes then put into an ice bath. Remove and pat dry.

Combine the edamame, green beans, garbanzo beans, green onions, red pepper and parsley. Pour dressing over the salad and gently stir to coat. Refrigerate a few hours before serving.
