Herbed Pork and Apples

The gravy really made this recipe.  We all fell in love with it.  Also, remember a little pink is OK. This is perfect for that traditional New Year’s Day meal of pork for health, black-eye peas for luck and collards for wealth.

Ingredients

tsp. each sage, thyme, rosemary, and marjoram

tsp. salt
1/2
tsp. pepper

pork loin boneless (about 2 lbs.)

medium tart apples cut into 1-inch chunks
1/2
large onion, cut into 1-inch chunks
1
½ cups brown sugar
1
cup apple juice, divided
1/3
cup maple syrup

Directions

Preheat oven to 325.

Combine herbs, salt and pepper; rub over roast.  Cover and refrigerate for several hours or overnight.

Bake, uncovered for 45 minutes.

Mix apples and onions with brown sugar; spoon around roast.

Pour ½ cup apple juice into the pan around the roast and continue to bake 45 minutes or until internal temperature reaches 160 to 170 degrees.

Transfer the roast, apples, and onion to a serving platter and keep warm.

Pour reserve pan drippings into a heavy skillet (or leave in the roasting pan if it can be heated on stovetop).

Add ½ cup apple juice and syrup.  Cook and stir over medium-high heat until liquid has been reduced by half, about 1 cup.

Slice roast and serve with gravy.
