Maple Collard Greens

Found this recipe by using Blue Apron. This recipe is a fresher and quicker way to enjoy collard greens.

Ingredients

small bunch collard greens, stems removed; thinly sliced
1
carrot, peeled and medium diced
1
tsp. olive oil
2
cloves garlic, peel and rough chop
2
Tbsp. maple syrup
1
Tbsp. sherry vinegar
1/2
cup water
Salt and pepper

Directions

In a medium pan, heat olive oil on medium-high until hot. Add the carrot and garlic; season with salt and pepper. Cook, stirring occasionally, 1 to 2 minutes, or until slightly softened.

Add the collard greens; season with salt and pepper. Cook stirring occasionally, 1 to 2 minutes, or until slightly wilted.

Add the maple syrup, vinegar and water; season with salt and pepper. Cook, stirring occasionally, 6 to 8 minutes, or until the collard greens have wilted and the liquid is slightly reduced in volume. Turn off the heat; season with salt and pepper to taste.
