Pan-Seared Fish with basil-caper butter

This is an easy sauce you can serve with several varieties of North Carolina Fish.

Ingredients

Fish fillets (flounder or seabass)

Tbsp. olive oil
1
Tbsp. lemon juice
3
Tbsp. butter
1
Tbsp. capers, drained
2
Tbsp. fresh basil, torn into pieces
Salt and Pepper to taste

Directions

Pat the fish dry with paper towels. Season both sides with salt and pepper.

In a medium non-stick pan, heat 1 Tbsp. olive oil on medium-high until hot. Add the seasoned fish. Cook 2 to 3 minutes per side, or until browned and cooked through. Leaving any browned bits (or fond) in the pan, transfer to a plate. Loosely cover with foil to keep warm.

 To the pan, add the lemon juice and butter. Cook on medium, stirring constantly and scraping up any fond, 1 to 2 minutes until the butter has melted.

Return the fish to the pan and spoon the lemon-butter up over the fish.

Turn off the heat, add the capers and basil. Season to taste with salt and pepper.
