Pork Saltimbocca

Serve with a side of pasta and a salad for a delicious meal.  This recipe can also be made with chicken.

Ingredients

Boneless Pork chops

slices thin sliced country ham or prosciutto

Fresh sage leaves, minced

cup flour

TBSP Extra Virgin Olive Oil

TBSP butter
1
TBSP shallot, minced
1
tsp. garlic, minced

cup baby Bella mushrooms, sliced thin
1/4
cup Marsala Wine
1/2
cup vegetable stock
1/4
cup heavy cream
1
TBSP fresh lemon juice
Salt and pepper

Directions

Wrap pork chops in plastic wrap and gently pound until thin but not torn. Cut country ham or prosciutto in half so you have 4 pieces. Cover each piece of pork with a piece of ham.  Season the flour with salt and pepper.  Dredge each piece of pork in the flour and coat on both sides shaking off any excess.

In a large pan on medium heat, add the EVOO.  When hot, sauté the pork with ham side down until ham in browned then flip and cook 1-2 more minutes.  Remove from pan and keep warm.

Add butter, shallots, garlic and mushrooms increasing the heat to medium-high.  Cook until the shallots are translucent. Add Marsala and deglaze the pan allowing the wine to reduce by half.  Add vegetable stock and lemon juice and bring to a simmer.  Stir in heavy cream, sage, salt and pepper to taste.

Return pork to the pan and simmer for one minute before serving.
