Red, White and Blue Sundae

A recipe I saw in People Magazine inspired this dessert. It is fun and delicious using North Carolina fruit just in time for July 4th. You can use any combination of fresh fruit in this dessert: blueberries, blackberries, strawberries and peaches.

Ingredients

cup heavy cream
1/2
tsp. vanilla extract

Tbsp. sugar, divided
1
(5.3 oz.) pkg. all-butter shortbread cookies, coarsely crushed

Tbsp. unsalted butter, melted
1
pt. strawberry ice cream
1/2
cup fresh blackberries
1/2
cup fresh blueberries
6
(8 oz.) wide-mouth glass jars
Mint, optional garnish

Directions

In a medium bowl, beat cream, vanilla and 1 Tbsp. sugar at high speed with an electric mixer until medium-stiff peaks form, 2 to 3 minutes.

Stir together crushed cookies, melted butter and remaining 1 Tbsp. sugar in a small bowl.

Spoon 2 Tbsps. cookie mixture into each jar. Top with a scoop of strawberry ice cream. Dollop with 2 Tbsps. whipped cream; top with 1 Tbsp. blackberries. Repeat layers beginning with cookie mixture and use 1 Tbsp. blueberries for the next layer. Add a dollop of whipped cream at the top. Garnish with a mixture of blueberries, blackberries, sprinkle of cookie crumbs and a sprig of mint.
