Sautéed squash and onions

NC Ingredients: Squash, zucchini, green onions

Ingredients

tbsp olive oil
1
large bunch green onions, chopped
1
lb. yellow squash, cut in medium dice
1
lb. zucchini, cut in medium dice
Salt and pepper to taste (go heavy on the pepper)

Directions

Step 1

Heat a large skillet or stir fry pan.

Step 2

Add the olive oil and heat slightly.

Step 3

Add the onions and sauté 3-4 minutes.

Step 4

Add the yellow squash and zucchini and cook, stirring frequently until the vegetables soften.

Step 5

Add salt and pepper; start with ½ teaspoon of each.

Step 6

Cook until desired doneness.

Step 7

Adjust salt and pepper to taste.
