Strawberry Salad with grilled pork

This salad is great for Spring and Summer.  You could enjoy it with grilled chicken instead of pork.  The dressing would also be delicious on a grilled ham sandwich with some Swiss cheese.

Ingredients

Tablespoons olive oil

Tablespoons white balsamic wine vinegar

Tablespoon sugar
1/2
teaspoon salt
Fresh ground pepper to taste

Tablespoons orange juice
3
Tablespoons pineapple juice
1/4
teaspoon poppy seeds
1
pint strawberries washed, capped and quartered
2
grilled pork chops
9
oz. bag of baby spinach
1/2
cup chopped and toasted pecans

Directions

Blend the first 8 ingredients together to make your dressing and let stand at room temperature for about 2 hours.

Place your spinach, pork chops, strawberries and pecans in a salad bowl or on a plate.

Pour the dressing and toss gently to coat.
